Pumpkin Pie Cupcakes - Week 1 of Pumpkin Treats

Irresistible Pumpkin Pie Cupcakes.Impossible Pumpkin Pie Cupcakes

1 15 oz can pumpkin puree
1/2 cup sugar
1/4 cup brown sugar...
2 large eggs
1 teaspoon vanilla extract
3/4 cup evaporated milk
2/3 cup all purpose flour
2 teaspoons pumpkin pie spice
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda

Preheat oven to 350 degrees. Line 12 cup muffin tin with silicone liners, foil liners sprayed with cooking spray or just spray the cups with cooking spray. Either of these three methods will make it easy to take the cupcake out after it’s cooked. Paper liners make it difficult to remove the cupcakes.

Mix the pumpkin, sugar, brown sugar, eggs, vanilla extract and milk. Add the flour, pumpkin spice, salt, baking powder and baking soda to the mixture. Fill each muffin cup with 1/3 cup of the mixture. Bake for twenty minutes and let cool for twenty minutes. Remove cupcakes from pan and chill in the fridge for 30 minutes. Top with whipped cream and sprinkle more pumpkin pie spice on top and serve. Makes 12 cupcakes. (I did make mini cupcakes instead of the full size. One batch makes two sheet pans full)

Uncle Jay In Town, Driving up to Weston, Chiefs Game

Jay came into town Friday night at 10:15pm. Chad and I went to pick him up after cleaning the house and eating Chipotle for dinner. When we got downtown we realized our exit was closed and then after sitting in traffic for 15 minutes I realized First Friday was going on downtown. At this point it started to rain so hard we couldn't see 2 feet in front of us. Got Jay and headed home. We all stayed up talking and went to bed after midnight...I believe someone stayed up watching Prison Break....that was not I.

The next day we ate the apple cider donuts he brought us from Tanner's these donuts are still the best donuts I have ever eaten. We headed up to J&S's around 9:45 and Jay was holding his nephew by 10:30.

We hung out for several hours..the boys went and got us Subway while Shannon and myself talked and watch the little man. Jason, Chad, and I had a little photo shot with J&S and Hudson for some family photos. Jason's photos turned out so well. I can't wait to see all of them.

Leaving there around 3:30 I wanted to drive up to Weston. It had been about 3 years since I had been up there and Jason wanted to check things out as well. Especially after he read in The Weston Chronicle that it had been 20 years since our friend Donny accidentally ran over his girlfriends kid brother's head. Everyone was fine after a couple of days but it was pretty dramatic in our small town of Weston.

We had completely forgot about Applefest this weekend so it was really crowded. We saw the new Fire Station...pretty fancy! We drove by our old house, my best friend in school's old house, and then through the town of Weston. Downtown was blocked off so we couldn't drive downtown which was a bummer. We had decided we would eat downtown but after we saw the crowd we decided to eat at Taco Via.

This is the B&B that we used to live in before mom and dad built the house in the country. The owners that bought it from us turned it into a B&B and have really changed it. The wall in the front is new, the ball lights, and the white fence are all new. They have really changed the outside of this house. It would be nice to stay in this house one of these days. I would love to see what she has done with it.

On Sunday, I invited J&S and little man down for food and the game. I love to cook for people...here is what I made. Everything was very tasty and couldn't have been any better.

Below if evidence what the men really do after the football games...sleep off the food they just ate. Shannon and Hudson are next to me on the couch and he is sleeping it off as well. Some good times with family.

2011 - Mexican Rivera Cruise

Chad surprised me for Christmas 2010 with a Cruise down the Mexican Rivera in February. We left out of LA and came back to LA to fly home. With the events happening in Mexico some of the ports were closed. Chad had booked us a suite without knowing this so we stayed on the ship the inter cruise. It was so much fun....we love cruising. Here are some of the picture from our cruise.

Fireplace Remodel

When Chad and I first moved into our home our fireplace looked like the above photo. The first thing I did was paint the fireplace linen white.  I really didn't care for how that turned out so Chad came up with a great plan of making the fireplace the focal point in the living room. Here are some of the steps via pictures that we took to create our new focal point in the living room. This project took two months (weekend work only) one winter....several years ago.

Halloween Time

Decorating at Work-
I love bringing my decoration from home. The people around me my not like it but I do. Since we spend more time at work then we do home it's nice to bring the holidays there.

Halloween at Home

Hallway Remodel

Our Hallway before we moved in. I pulled all of our carpet and painted the
walls the living room color. Winter Wheat.
Below is the new color Navajo White. Some of the door frames need to be painted Linen White but I will take on a door frame & door a night this week before or after water aerobics. We also plan in install crown modeling.

This photo shows the finished door frame and paint color. I'm worried that they are to close to being the same color. I really don't want to paint again.
