2011 - Mexican Rivera Cruise

Chad surprised me for Christmas 2010 with a Cruise down the Mexican Rivera in February. We left out of LA and came back to LA to fly home. With the events happening in Mexico some of the ports were closed. Chad had booked us a suite without knowing this so we stayed on the ship the inter cruise. It was so much fun....we love cruising. Here are some of the picture from our cruise. 














Fireplace Remodel















When Chad and I first moved into our home our fireplace looked like the above photo. The first thing I did was paint the fireplace linen white.  I really didn't care for how that turned out so Chad came up with a great plan of making the fireplace the focal point in the living room. Here are some of the steps via pictures that we took to create our new focal point in the living room. This project took two months (weekend work only) one winter....several years ago.

Halloween Time



Decorating at Work- 
I love bringing my decoration from home. The people around me my not like it but I do. Since we spend more time at work then we do home it's nice to bring the holidays there.

Hallway Remodel

Our Hallway before we moved in. I pulled all of our carpet and painted the 
walls the living room color. Winter Wheat.
 Below is the new color Navajo White. Some of the door frames need to be painted Linen White but I will take on a door frame & door a night this week before or after water aerobics. We also plan in install crown modeling. 




This photo shows the finished door frame and paint color. I'm worried that they are to close to being the same color. I really don't want to paint again.

Mexican Fiesta Day - At Work - For K's Birthday

I made my:

Fruit Salsa and Cinnamon Chips & Shredded Beef

INGREDIENTS:
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored
and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

10 (10 inch) flour tortillas
butter flavored cooking spray
2 tablespoons cinnamon sugar
DIRECTIONS:
1.         In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2.         Preheat oven to 350 degrees F (175 degrees C).
3.         Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.

4.         Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Shredded Beef

3 lb roast
3 packages of Taco Seasoning
1 Cup of Water
Slow Cooker Bag

10 Hours on Low. Cut with Scissors and Serve.

10th Anniversary Vacation - Maine, Canada, and Massachusetts

We planned a 10 day vacation to Maine. Chad booked us flights to Boston and we decided to drive the rest of the way. While we where so close to Nova Scotia I couldn't not go...so you guessed it we went to Nova Scotia.
