Jason's Coming to Town

My brother Jason is taking the train Friday to come see his new baby nephew Hudson. He will be staying with Chad and I which means I get to cook. :)

Classic Waffles
2 C all purpose flour
4 t baking powder
1 t salt
2 T white sugar
2 eggs
1 ½ C warm milk
1/3 C butter melted
1 t vanilla extract
In a large bowl, mix together flour, salt, baking powder, and sugar; set aside. Preheat waffle iron to desired temperature. In a separate bowl, beat the eggs stir in milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended. Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp.


Quick Quiche

4 eggs
2 cups milk
1 cup Bisquick baking mix
2 cups shredded cheddar cheese
1 small onion, chopped  (optional) (Sometimes use pepper and mushrooms as well)
1 roll of Jimmy Dean Sausage
Brown meat and onion (until clear). Blend other ingredients in mixing bowl. Stir in meat and onion. Place into a 9-inch deep-dish, sprayed or buttered pie pan (glass pan is best). Let stand 10 minutes and place into half of preheated oven; bake at 325 degrees for 40 to 50 minutes or until center sets (This will be closer to an hour). Let stand for at least 5 minutes. Then serve!




Tina’s Cream Cheese Dip

2 (8oz) Cream Cheese (soft)
1can Rotel (drained)
1 package dried beef
Let cream cheese soften; cut dried beef into small pieces; drain rotel and mix altogether.


Ham and Cheese Sliders
24 Hawaiian Sweet rolls
24 pieces honey ham
24 slices Swiss cheese
1 stick of butter
3 tbls Onion Flakes
1 ½ tsp poppyseeds
1 ½ tsp mustard
½ tsp Worchester shire Sauce
Place all 24 bottom halves in a 9 x 13 pan. Melt butter, add onion flakes, poppyseeds, mustard and Worchester shire. Brush half of mixture on the bottom halves of roles in pan.  Fold each piece of cheese into fourths. Place one half slice on roll bottoms, Place two pieces of ham on each sandwich. Top with remaining half slice of cheese. Place roll tops on sandwiches and brush remaining butter mixture over tops of rolls. Bake at 300° for 20 to 30 minutes... Until cheese is melted.
